Ingredients
- 500g beef mince
- 1 small onion diced
- 2 gloves garlic minced
- 2 carrots or 100g frozen carrots
- 50g peas
- 100g corn (you can use the frozen mix bag and weight out 250g)
- 1 tbsp tomato paste
- 2 bayleaf and 1 beef stock cube
- 30ml reduced salt and sugar BBQ Sauce
- 5mil olive oil (you can skip this one)
- 15g butter
- 25g shredded cheese
- 750g spudlite potatoes
Method
- Peel and dice potatoes add to a pot with salt and water and get it going on the heat.
- Fry off your mince in the oil.Once cooked add garlic and onion sauce till onions are translucent.
- Add beef stock cube then add tomato paste in with bayleaf.Add in all veggies and BBQ sauce.Mix everything well add 1/2-1 cup water drop to low- medium heat and let simmer for 10-15min.
- Drain your boiled potatoes (leaving in about 1/2 cup water.Add your butter and 10g of the cheese mash all together add salt to taste.
- Layer your dish with mince, then potato mash and the remaining 15g cheese.Bake in the oven for 10-15min at 180.
Divide into 4 and enjoy! ☺️
