Cottage pie

Ingredients

  • 500g beef mince
  • 1 small onion diced
  • 2 gloves garlic minced
  • 2 carrots or 100g frozen carrots
  • 50g peas
  • 100g corn (you can use the frozen mix bag and weight out 250g)
  • 1 tbsp tomato paste
  • 2 bayleaf and 1 beef stock cube
  • 30ml reduced salt and sugar BBQ Sauce
  • 5mil olive oil (you can skip this one)
  • 15g butter
  • 25g shredded cheese
  • 750g spudlite potatoes

Method 

  1. Peel and dice potatoes add to a pot with salt and water and get it going on the heat.
  2. Fry off your mince in the oil.Once cooked add garlic and onion sauce till onions are translucent.
  3. Add beef stock cube then add tomato paste in with bayleaf.Add in all veggies and BBQ sauce.Mix everything well add 1/2-1 cup water drop to low- medium heat and let simmer for 10-15min.
  4. Drain your boiled potatoes (leaving in about 1/2 cup water.Add your butter and 10g of the cheese mash all together add salt to taste.
  5. Layer your dish with mince, then potato mash and the remaining 15g cheese.Bake in the oven for 10-15min at 180.

Divide into 4 and enjoy! ☺️
